Our “specialty coffees”

“Specialty coffee” means exceptional coffee, defined by its distinctive flavours, single origin and meticulous production process.

To be classed as specialty coffee, it must score above 80 out of 100 in a cupping assessed against strict criteria.

The beans are usually Arabica, known for their more complex aromas and flavours.

Specialty coffees often come from micro-lots, meaning small plots of farmland.

Coffee lovers prize specialty coffees for their complexity, aromatic nuances and traceability.

By choosing specialty coffee, consumers help encourage responsible practices and promote quality and craftsmanship in the coffee industry.

The Fleur de Café team is committed to a thoughtful approach that takes time for quality, from the careful selection of coffees to small-batch roasting that reveals the full richness of the beans.

Our roasting workshop

Coffees from all over the world, roasted in France, in the Sancerre area of the Loire Valley.

It is no coincidence that our workshop sits alongside one of France's most prestigious wine terroirs.

At Fleur de Café, we embrace the similarities between winemaking and coffee roasting:
* the concept of terroir,
* cultivars for coffee and grape varieties for wine, which shape the character of the final product,
* tasting skills to assess the aromatic, flavour and visual qualities of each product.

Why “Fleur de Café”?

The name “Fleur de Café” (coffee flower) is inspired by the Jardin de Marie, a landscaped garden of nearly 2 hectares in Neuilly-en-Sancerre (18250), where our roasting workshop is based.

Like a flower, coffee offers aromatic notes and subtle flavours, especially in specialty coffees.

It also evokes how coffee grows: from the flower that eventually becomes the coffee we know.

The coffee tree produces delicate white flowers before developing its coffee beans.

These white flowers are called "coffee flowers".

Our expertise

From selecting the green beans to roasting them, roasting is a demanding craft whose aim is to reveal the flavours of the beans without distorting them. At Fleur de Café, we favour a slow roast at no more than 220°C, cooking the beans right through. Their colour ranges from medium to light brown, a sign that they are not burnt.

Our commitment… exceptional coffees for you

At Fleur de Café, we only offer so-called "specialty" coffees, a label awarded by the Specialty Coffee Association (SCA).

This international non-profit organisation, founded in 1982, promotes high-quality coffee culture around the world.

When coffees are assessed by an international network of professionals, only those scoring 80 or more out of 100 earn the "specialty coffee" label.

The criteria cover aroma, flavour, body, acidity, uniformity and balance.

From their terroir and farming methods to their roasting in our workshop, our coffees are fully traceable all the way to your cup.
